Description

A simple dessert that is perfect during the fall season and is geared for all members of the family.

Ingredients

  • FOR THE BARS:
  • 4 whole Large Eggs, Set To Almost Room Temperature
  • 1 cup Vegetable Oil
  • 2 cups Granulated Sugar
  • 15 ounces, weight Can Of Pumpkin
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ teaspoons Ground Ginger
  • 2 teaspoons Cinnamon
  • ½ teaspoons Ground Cloves
  • ½ teaspoons Ground Nutmeg

  • FOR THE FROSTING:
  • 3 ounces, weight Cream Cheese, Softened
  • ½ cups Unsalted Butter, Softened
  • 1 teaspoon Vanilla Extract
  • 2 cups Powdered Sugar
  • 1 pinch Ground Ginger
  • 1 pinch Cinnamon
  • 1 pinch Ground Cloves
  • 1 pinch Ground Nutmeg

Preparation

Begin by preheating your oven to 350 degrees (F).

Get a large bowl out, and combine the eggs, oil, sugar, and pumpkin. Using a fork, mix very well until everything is incorporated. Add the remaining bar ingredients to a sifter, and do just that, sift it into the mixed pumpkin mixture. Mix well.

Into a lightly buttered and floured jelly roll pan, pour in the mixture. Place in the preheated oven for approximately 30 minutes, or until fully cooked. I like to insert a knife down the middle and make sure it comes out clean. Once you have achieved that, and I say that because all ovens are not the same so cook times may vary, then remove the cake and let it cool.

This is the time to make the frosting. To a mixing bowl, add the cream cheese, butter, vanilla extract, and the powdered sugar. Mix really well until all of the ingredients are combined. Ok, you must give it a taste. Now hurry and spread it over the top of the bread. Mix the spices together, and sprinkle the mixture onto the top of the frosting.

Cut into bars and enjoy. I’m telling you the entire family loved these bars, and my kids would ask for a piece after every meal. The cream cheese frosting and the pumpkin was a really great combination, that reminded me once again how much I love fall.

These were wonderful. Often I tweak recipes to be the way I think is perfect, but this was perfect just as is! I added half cup of applesauce and half cup oil instead of 1 cup oil and it was aweseome. Could use more frosting though, I would double the recipe next time. :) Don’t skip out on tsprinkling the spices on top, that made it for me.

I had some Pumpkin left over from making a pumpkin bread earlier in the week and decided to go ahead and make this recipe. It’s very good and moist. I actually didn’t quite have 15 ozs of Pumpkin and it still tasted just fine. The frosting goes along perfectly with it. Definately will make some more again in the future.
