Description

A light and airy angel food cake with a hint of warm spiced pumpkin all covered in a silky maple glaze.

Ingredients

  • 1 box (16 Oz. Box) Angel Food Cake Mix
  • 1 cup Pumpkin Puree
  • 1 teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ¼ teaspoons Ground Ginger
  • ¼ teaspoons Ground Cloves
  • 2 teaspoons Pumpkin Pie Spice (Instead Of The Other Spices)
  • 1 cup Powdered Sugar
  • ½ cups Maple Syrup (grade B)

Preparation

Mix the cake as directed (you’ll typically need to add water as indicated in the package directions).

Place the pumpkin and spices in a bowl and stir to combine. Remove 1/3 of the angel food mix to a separate bowl with the pumpkin. Fold the pumpkin mixture carefully into the angel food mix. (To fold, place the spatula on the side of the bowl and scoop down towards the bottom. Bring the spatula up and fold over the top. Repeat until combined.) Add this mixture back into the rest of the angel food batter and fold until combined.

Bake as directed on the box.

For the maple glaze, mix the powdered sugar and maple syrup. Add more powdered sugar or maple syrup if you want a different thickness. Serve over warm angel food cake.

This was a simple recipe that turned out great! Read through the instructions first – you mix up the cake, then separate and add the pumpkin to a third of the batter, which gets gently folded back into the rest of it. I doubled the spices and omitted the glaze since my box mix is fairly sweet. Lovely spongy texture and great pumpkin flavor!

This looks so yummy but I have to ask. What do you do with the 1/3 of the angel food mix that’s removed? Is it discarded?

Loved this recipe! Simple and easy to make. Came out spongy and fluffy with a great pumpkin taste. I doubled the spices and omitted the glaze and it was sweet enough for me. Will go great with coffee!
