Description

Incredibly easy, nutritious, and delicious, with secret ingredients that NO ONE will guess!

Ingredients

  • 30 ounces, weight Canned Black Beans, Drained
  • 4 whole Eggs, Beaten
  • 1 cup Oil (cocount, Grapeseed, Or Canola)
  • 1 cup Sugar
  • ¾ cups Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 cup Smooth Peanut Butter
  • ½ cups Semi-sweet Morsels

Preparation

Note: make sure that the beans are unseasoned!

In a blender, puree the black beans. Add the eggs. Add the oil.

In a bowl, mix the sugar, cocoa powder, and baking soda.
Add the bean mixture to the dry mixture and blend. This is a wet batter.

All of this can be done in one bowl with a stick blender.

Pour into a 9 x 13 baking dish and bake for 30-45 minutes at 350 degrees. It usually takes about 35 minutes, but these will overcook quickly! Remove from the oven when the center is *just* set.

Meanwhile, microwave the peanut butter. Add the chocolate morsels. Frost the warm brownies. Enjoy!

Variation: add morsels to the batter.

For a non-gluten free version, a couple of tablespoons of flour does provide a little lift.
