Description

Black Plum and Ginger Crumble.

Ingredients

  • 8 whole Black Plums, Stoned And Cut Into 8 Small Wedges
  • 4 Tablespoons Brown Sugar
  • ¼ cups Apple Cider
  • 2 Tablespoons Honey
  • 1 teaspoon Fresh Ginger, Peeled And Finely Chopped
  • ⅔ cups Flour
  • ½ sticks Frozen Unsalted Butter
  • ¼ cups Brown Sugar
  • ⅛ cups Oats
  • 3 Tablespoons Finely Chopped Pistachios

Preparation

1. Preheat oven to 375F degrees. Lightly grease 4 mugs.
2. Using a large saucepan over medium heat, add in the plums, brown sugar, cider and honey. Simmer for 5 minutes until the sugar dissolves and the plum softens slightly. Add in the ginger and stir to combine.
3. Divide the mixture between four small mugs or ovenproof dishes.
4. In a food processor, add in the flour and butter and pulse until it resembles coarse breadcrumbs. Pour into a mixing bowl and add the sugar, oats and pistachios. Mix to combine.
5. Spread the crumble topping evenly over the plum mixture and place on a baking sheet on the centre oven rack.
6. Bake for 20-25 minutes or until the topping is golden and the juices start to bubble. Let rest for a few minutes and serve.
