A sweet and tangy icing to top pineapple cupcakes! Great for summertime treats.
Cream softened butter with an electric mixer, gradually adding powdered sugar to the bowl and creaming together well. Stir in crushed pineapple and juice and blend thoroughly. Mixture will resemble a glaze that may be easily brushed onto individual cupcakes or a large cake; I make mine from a box of pineapple cake mix. Sprinkle extra powdered sugar on top to add a decorative garnish, if desired. Tops approximately 20 cupcakes.
