Description

Lemon Bars are best when they are simple, not too many ingredients, no schmancy additions. After trying several recipes, I’ve narrowed it down to a favorite. It’s the perfect combo of sour/sweet. The crust is light and flaky and is completely in proportion to the amount of lemon topping: more lemon, less crust. Simple and perfect.

Ingredients

  • FOR THE CRUST:
  • 2 cups Flour, Sifted
  • ½ cups Powdered Sugar
  • 1 cup Butter, Softened
  • _____
  • FOR THE FILLING:
  • 4 whole Eggs, Beaten
  • 2 cups White Sugar
  • ½ cups Lemon Juice
  • 1 Tablespoon Lemon Zest, Grated
  • ¼ cups Flour
  • ½ teaspoons Baking Powder

Preparation

For the crust, mix the softened butter into the flour and powdered sugar with your hands (or a pastry blender) until it clings together. Press the mixture into a 13×9″ greased pan. Bake at 350 degrees for 20 – 25 minutes or until lightly golden. For the filling, beat the eggs with a hand mixer for about 5 minutes until frothy. Add the sugar, lemon zest and lemon juice. In another bowl, sift together flour and baking powder. Stir into the egg mixture. Pour over the baked, warm crust. Bake at 350 degrees for 25 minutes. Cool and sprinkle with powdered sugar. Done!

These little numbers were terrible! On my waist line that is, after eating half the pan! I whipped these up for my mom for her birthday…lemon bars are her favorite. Easy to make and easy to eat. The crust was perfect and I thought the lemon was just the right amount of lemony.
These are going to be in my house often I can tell. My kids kept asking for them and I would say, “they’re for Grandma.” then I’d go and sneak one, making sure all evidence of powdered sugar was gone before I walked away from the kitchen.

Oh yes, Friend, these were quite good!! Gobbled up to huge raves and reviews! I think I prefer it a little tart so I would add just a little less sugar. Thanks so much for the recipe! My first time making lemon bars too and it was so successful!

I made these today and got rave reviews! Simple yet chock full of sweet lemony zing! It’s been printed, laminated and placed in my regular file. Yum!

I’ve been using Paula Dean’s recipe for this and have never been happy with the flavor of hers… like I have in recipes past I have used for lemon bars. These are PERFECT in every way. I wouldn’t change a think. These easily doubled and baked up with great color!
