Description

Perfect for your health-conscious Valentine. Enjoy it with a scoop of vanilla bean ice cream and a sprinkling of crystallized ginger. After you enjoy the pears, strain the poaching liquid, reheat and enjoy the mulled wine next to the fire with your sweetie.

Ingredients

  • 2-½ cups Dry Red Wine (I Use Cabernet Sauvignon), Plus Additional 1/2 Cup If Needed
  • ½ cups Water
  • ¼ cups Sugar
  • 1 whole 2" Piece Of Cinnamon Stick
  • 1 whole Clove
  • ½ teaspoons Ground Allspice
  • 1 whole 4" Strip Of Tangerine Zest
  • 2 whole Firm Red D'Anjou (or Bosc) Pears
  • Vanilla Ice Cream, For Serving
  • Crystallized Ginger For Serving

Preparation

In a small saucepan with a 4-cup capacity, pour in the wine. Add the water, sugar, cinnamon stick, clove, allspice and zest. Bring this mixture to a simmer. Meanwhile, carefully peel the pears, leaving the stem intact. If you would like the pears to stand upright on a plate, trim the bottoms flat. Once the sugar is dissolved in the mulling mixture, add the pears carefully. If the liquid does not almost completely cover the pears, add more wine. Simmer the pears for 10 minutes, cover and turn off the heat. Let the pears cool before removing them from their wine bath. Serve with a scoop of your favorite ice cream and diced crystallized ginger.
