Description

A soft peanut butter cookie bar stuffed with chopped Oreos.

Ingredients

  • ½ cups Butter, Softened
  • ½ cups Peanut Butter
  • ¾ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 12 whole Oreo Cookies, Coarsely Chopped

Preparation

Preheat oven to 375ºF. Grease or spray an 8 x 11 1/2-inch baking dish.

In a large mixing bowl, cream butter and peanut butter together with an electric mixer. Add sugar, mixing until combined. Add eggs and vanilla, beating until all combined. Add flour and baking soda, mixing thoroughly. Add chopped Oreos and mix for about 10 seconds.

Pour into a baking dish, spreading evenly. Bake for 25 minutes or until lightly browned. Cool slightly and cut into squares. Serve warm or at room temperature. Store in an airtight container.

Great concept. The bars were a little dry but nevertheless very good! I think next time I will add a frosting or maybe some chocolate chips.
