Description

Juicy, sweet and just like your grandma used to make.

Ingredients

  • FOR THE FILLING:
  • 5 cups Fresh Peaches, Sliced
  • ½ cups Sugar
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Flour
  • ½ teaspoons Vanilla Extract
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Almond Extract
  • ¼ teaspoons Salt
  • 2 Tablespoons Butter
  • FOR THE CRUST BATTER:
  • ½ cups Unsifted Flour
  • ½ cups Sugar
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1 whole Large Egg (slightly Beaten)
  • 2 Tablespoons Butter, Softened

Preparation

Preheat oven to 375 F.

Combine all of the filling ingredients in a large bowl then place the mixture in an 8 x 8 x 2 baking dish.

In a medium bowl combine all of the batter ingredients (everything except the butter). Beat until smooth using a wooden spoon. Drop the batter in nine portions over the top of the filling, spacing evenly in the baking dish. Dot the top of the filling with 2 tablespoons of butter.

Bake at 375 F for 35-40 minutes.
