While doing private duty home care, I was treated quite often to my patient’s daughter’s baking. She had the best recipes. Occasionally she would remember to write them out for me. This is one of the things she made that I always liked.
1. Place cereal, coconut and peanuts in a large bowl; set aside. Butter a 15x10x2 inch pan (or cookie sheet) and set aside.
2. Place sugar and light corn syrup in a saucepan on medium heat. Stir until mixture comes to a rolling boil (a boil that can’t be stirred down).
3. Add 1 1/2 c. peanut butter; stir well.
4. Pour over ingredients in bowl. Mix well. Pour into the buttered cookie sheet, and use buttered fingers to push mixture into the corners of the pan. Frost with the butterscotch and chocolate morsels that have been melted in the microwave until smooth.
5. Let cool completely and cut into bars.
