Description

Need a remedy for the rainy day blues? This is just the thing!

Ingredients

  • 6 whole Kiwis
  • 1 pound, 1-⅔ ounces, weight Mascarpone
  • 3 whole Eggs, Separated
  • 4 Tablespoons Sugar
  • 1 envelope (10g Envelope) Whip It! (Dr. Oetker)
  • 3 bags (Regular Size) Iced Tea
  • 1 cup, 2-⅔ teaspoons, ⅞ pinches Water
  • 2 Tablespoons Cointreau
  • 7 ounces, weight Boudoir Biscuits
  • 5-⅓ ounces, weight Grated White Chocolate

Preparation

Cut the kiwis in half, peel and mash them. In another bowl, mix the mascarpone with the egg yolks and the sugar. Beat the egg whites to foam and carefully add them to the mixture with the sachet of Whip It!.

Use the tea bags and the water to make a strong iced tea. Add the Cointreau. Now dip the boudoir biscuits in the tea and lay them in a glass oven tray or deep dish. Once the bottom is covered, spread some mascarpone mixture over it. The next layer is the mashed kiwis. Cover those with more dipped boudoir biscuits, add another layer of mascarpone mixture and finally, sprinkle the grated white chocolate over the mixture.

Set the dish in the refrigerator and allow to set for at least 3 hours. The flavours will mingle, the mascarpone mixture will set … mmm!
