Preheat oven to 350 degrees.
Beat egg yolks with meyer lemon juice and zest.
Add sweetened condensed milk and beat to combine completely with the egg mixture.
Bake for 5-10 minutes, until small bubbles form.
Top with or serve alongside whipped cream. Use my stabilized whipped cream recipe if you want to top with whipped cream before serving time.
Notes:
I suspect that regular lemons will work in this recipe too, but I have not tried them yet.
For homemade graham cracker crust, I use 1 1/4 cup cracker crumbs, 1/3 cup butter, and 1/4 cup sugar pressed into the pan and baked for about 7 minutes at 375 degrees.
