Sift flour, baking powder, and salt together. Set aside.
Cream the butter and sugar until they are light and fluffy. Add the eggs in one at a time. Slowly add the vanilla and nutmeg. Gradually, add the flour mixture until well combined. Chill the dough for 1-2 hours in the refrigerator or if you’re crunched for time, use the freezer for 15 minutes.
Preheat the oven to 400 degrees. Line baking sheets with parchment paper. On a clean floured surface, roll your dough to 1/4 inch thick. Cut out shapes using any cutters you prefer!
Bake for 6-8 minutes in the preheated oven or until the edges are tinged a light brown. Remove from cookie sheets. When cool, they are great to frost and decorate!
