I can’t believe how quickly the filling came together. I used a pre-made shortbread crust & thought it really complimented the pineapple. It’s a unique & super tasty pie. Thanks for sharing!

For some reason this came out more like pineapple pudding than pie…I followed all the directions, but the filling just completely did not set at all. Having never made a custard-style pie before, I cannot tell where I went wrong.
That being said, it was really TASTY pineapple pudding…

I just made this, and I’m so glad that the rest of my family was playing a video game, because I could lick my plate and they didn’t notice!
I don’t think I’m going to have to worry about those weeping meringue issues, as this pie is just not going to last this long! So good, and very easy. This was my first meringue pie, because I didn’t think I liked meringue pies, and I thought it was complicated. Turns out, it’s easy and yummy!

My mom made this pie tonight for dessert and my whole family was super surprised at how good this pie was! The pineapple flavor isn’t over-powering and it is the perfect amount of sweetness! Delicious!

I had this last night and although it was pretty good, I personally couldn’t get past the salty meringue. I will say that it offset the sweetness of the filling to give it some balance.

I made this pie on Friday and was so surprised by the mild flavor. I did not have crushed pineapple, so I used pineapple rings and pureed them. My husband is not a fruit pie person and he even loved it!!

So simple! So delicious! If I could bring myself to using a store bought crust it would go together in about ten minutes. But even making my own crust this is a magically easy and tasty dessert. Thank you for the recipe.

This pie is fantastic. I had never made a meringue pie before, I couldn’t believe how easy it was. I had a fresh pineapple so I put it in the food processor to get the right consistency – it worked great. Thanks for sharing this tasty & fun recipe!

I made this tonight. Used splenda instead of sugar. Good stuff! Thanks for the recipe!

This was DELICIOUS!!! Husband and I both loved it. I accidentally caramelized the sugar in the first step and it made it even MORE rich and flavorful. Thanks for posting!

Yardsailor – Stitch & Bitch! I love it! I hope you love this pie, too. It’s even better when you make a crust from scratch and pre-bake it.

This looks delicious. I love pineapple and this pie is going on my to-do list! It is high time I got over my fear of pie crust and start baking some pies!

This looks soooo good!
Is the pineapple drained?

Natalie,
Do you buy the crushed pineapple in its own juices or the one in syrup? This is probably one of those “Well, duh” questions but I fall into the “Can’t cook worth a darn” group.
Can’t wait to try this. Thanks for sharing it.

Puppydogs – No, it’s not drained. Dump the whole thing in!
Lighthearted – I don’t think I’ve ever seen pineapple in syrup! I would just use the pineapple in its own juices.
