Description

This is such a yummy and pretty holiday dessert. I love it! When I find fresh fruit that is beautiful, this is what I want to make.

Ingredients

  • FOR THE CRUST:
  • ¾ cups Butter
  • 1 cup Sugar
  • 1 whole Egg
  • ¼ cups Molasses
  • 2-¾ cups Flour
  • 2 teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Ground Ginger

  • FOR THE FROSTING:
  • 8 ounces, weight Cream Cheese, Softened
  • 1 cup Powdered Sugar
  • 8 ounces, weight Cool Whip
  • Fresh Fruit, For Topping

Preparation

Combine the butter, sugar, egg and molasses together until creamy. Add the dry ingredients. Mix completely. Pat the cookie dough into a large silver cookie sheet. Bake in a 350 F oven for 10-15 minutes, until the crust is puffed in the middle. Don’t over-bake. That’s bad. Once the crust is cool, top with frosting.

To make the frosting, beat the cream cheese and powdered sugar until combined. Fold in the Cool Whip. Mix until combined. Spread on top of cooled crust and top with your favorite fresh fruit.

Pomegranate Seeds
Grape
Sliced Bananas
Whatever tickles your fancy

I made this for a couples wedding shower and had rave reviews. In fact my pastor requested it for the next meeting with the board. A great twist to an otherwise plain recipe.

Oh boy, this is so good. The gingersnap crust is so much more flavorful than a plain sugar cookie crust and the creamy layer is perfect with the fruit. Not overly sweet so the fruit flavor can stand out. Loved it!! Will definitely make again.
