This is such a yummy and pretty holiday dessert. I love it! When I find fresh fruit that is beautiful, this is what I want to make.
Combine the butter, sugar, egg and molasses together until creamy. Add the dry ingredients. Mix completely. Pat the cookie dough into a large silver cookie sheet. Bake in a 350 F oven for 10-15 minutes, until the crust is puffed in the middle. Don’t over-bake. That’s bad. Once the crust is cool, top with frosting.
To make the frosting, beat the cream cheese and powdered sugar until combined. Fold in the Cool Whip. Mix until combined. Spread on top of cooled crust and top with your favorite fresh fruit.

Kiwi
Strawberries
Raspberries
Blackberries
Mandarin Oranges
Fresh Pineapple
Pomegranate Seeds
Grape
Sliced Bananas
Whatever tickles your fancy

I made this for a couples wedding shower and had rave reviews. In fact my pastor requested it for the next meeting with the board. A great twist to an otherwise plain recipe.

i make something similar to this with a sugar cookie base, but i cant wait to try it with ginger!! and your photo has made me so hungry for summer
