Fruit Pizza – A Sweeter Version for the Kids!

Description

You can theme this tasty dessert to go with whatever occasion! Kids especially love it, but adults really enjoy it too!

Ingredients

  • 2 pints Fresh Strawberries, Sliced 1/4-inch Thin
  • 2 cans (11 Oz. Can) Pineapple Tidbits
  • 1 can (11 Oz. Can) Mandarin Oranges
  • 1 box (6 Oz. Box) Jello Vanilla Cook N' Serve Pudding Mix
  • 1 package (16 Oz. Package) Sugar Cookie Dough, Pre-cut
  • 1 package (8 Oz. Package) Philadelphia Cream Cheese, Softened
  • ¾ cups Powdered Sugar

Preparation

Cut strawberries from top to bottom into 1/4-inch slices. Place a colander on top of a bowl. Open cans of pineapples and oranges, and drain them in the colander, saving the juice—this is important! Now in a medium sauce pan, you want to cook the pudding using the fruit juice, approximately 3 cups of juice. Basically follow the package directions, but you’re using the juice instead of milk. Once it boils, take it off the heat and let it cool to lukewarm. In a large bowl, mix all the fruit together with the warm pudding glaze. Cover and refrigerate while you do the rest.

Preheat oven to 350 degrees. On a pizza pan, place the sugar cookies around 1 inch apart. Then flatten them a bit with your hand. They don’t need to touch, as they will expand in the oven. Bake for the amount of time specified on the package directions. It’s actually a little better if they look slightly underdone. Remove from the oven and cover after it cools.

Now beat the softened cream cheese together with powdered sugar. You want to make it really smooth so scrape down the sides of the mixing bowl and beat again. Spread this mixture on top of sugar cookie crust with a rubber spatula. You want it to look like a pizza so don’t go all the way to the edges—you have to have crust! Now cover and refrigerate this too.

Around 1 hour before serving this, you can scoop the fruit on top and put the pizza back in the fridge. Once you add the fruit, this doesn’t keep well more than 24 hours or so. Slice it up like pizza and then get your ego fed, because this is a crowd pleaser!

Note: you can use whatever fruit you like with this. At Christmas you can do just strawberries and kiwi. On July 4th you can do blueberries and raspberries. On Easter you can do kiwi and pineapple and peaches. Get creative!
