Description

Old fashioned custard pie with coconut. This will change your life! (Even if you don’t like coconut.)

Ingredients

  • ½ cups Butter, Really Soft Or Melted
  • 1-½ cup Granulated Sugar
  • 1 cup Evaporated Milk (canned Like PET)
  • 2 whole Eggs, Beaten
  • 2 Tablespoons Flour
  • 1 teaspoon Pure Vanilla
  • 1 cup Shredded Coconut (from A Bag)
  • 1 whole 9-10" Unbaked Pie Shell

Preparation

Preheat oven to 250 degrees (not a typo, it’s 250F). Mix everything (except the pie shell) together and pour into unbaked pie shell. Bake for 1 1/2 hours. Starting at an hour, check for doneness every 15 minutes. Pie will be golden brown when it’s done. This pie is great at any temperature, but I suggest serving slightly warmed. Enjoy!

I will try this…but I can’t find coconut in bags here only from one of my 9 coconut trees ~ fresh will be good. :)

I have a similar recipe but haven’t tried it with evaporated milk….ooh and yours has more butter. Sounds rich and delicious! I’ll have to give it a try!!

I made mine in a deep pie and so made it 1.5. It took longer to cook for sure because after 1 hour it was still pretty runny. After upping temp to 300 it was done after another 40 minutes, again probably because I made it a bigger pie. Very good rich flavor. Thanks for sharing!
