Very Culinary on 4.25.2011




Absolutely fantastic. The inside is silky smooth with slight texture from the coconut, the outside crust is so buttery and flaky, and the taste is out of this world. Bonus that it took only 10 minutes to put together. The hardest part was waiting for it to cool off to take a bite.

I feel bad writing a bad review, but if we are to rate rate recipes, we need to be fair & genuine in our response. I love pie and was curious to try this recipe based on the 2 positive reviews (the Tasty Kitchen blog & Very Culinary).
I do not share their positive review of this pie. I have had far better coconut pies. I was curious that with so few ingredients this pie could get reviews that said “out of this world” and “call the news, hide in the closet to eat it”.
Let me start by saying that I followed the very few directions perfectly and used the ingredients and measurements as directed. This is what I found wrong about this pie:
1.) It is very oily and greasy tasting.
2.) There is not much flavor at all. The vanilla is lost, perhaps it should be doubled? (I used top quality real vanilla.)
3.) It is way too sweet. Sickeningly sweet.
4.) The consistency is mushy and does not slice well. To be expected with coconut for sure, but this pie is not what I would call “silky smooth”. I would prefer a creamier taste and it just feels greasy & stringy in the mouth.
This pie is not worth the calories. Though easy to make, it is not worth the time either.
Sorry, Great Grandmother Pearl. I hate to give this a low review, but this was my honest opinion.

I made this today and it was very good. It was a little too rich and sweet for my taste though DH just loved it.
I will definitely make it again but probably decrease the butter and sugar to lighten it up a bit. The texture is wonderful.
I did pre-bake my crust to prevent the soggy bottom that is so common in custard pies.

This is a seriously easy pie to make. I was pleased but wish I had used unsweetened coconut. Very rich. My husband LOVED it and had two pieces while it was still warm. If your recipe is specific, I think it would help to update the recipe to specify unsweetened or sweetened. I think it would be great either way – just a little less richness with the unsweet.

Unlike mousemom, I thought it was excellent. I did use a little less sugar than the recipe called for, and I could definitely taste the vanilla. The only problem is that I would have loved to eat another slice…maybe tomorrow!
I’ve made the coconut pies with the long drawn-out instructions, and, though they’re tasty, I like the ease and taste of this one too.
Will definitely make again!

I made this pie with 1/2 cup less sugar than the recipe called for and unsweetened coconut. I used a Marie calanders unbaked pie crust and it turned out nice. For me it was a littlee too sweet and rich but my kids loved it. I like how easy this one is to make. Nice!

My husband loved it! A very important plus. I enjoyed it too, a wonderful bonus. Not being much of a cook, I appreciated the simplicity of it. I followed the directions exactly [I may have bumped up the vanilla a bit] and it came out great. I may add more coconut next time [I used the sweetened] because of my husband’s fondness for it. I will make this pie again soon with the second pie crust of the two-pack I bought.

This was a good, easy pie. I too decreased sugar by about a third of a cup and used sweetened coconut. It was sweet enough, but not too much. Compliments were many and several compared it to a pecan pie, without the pecans. I’ll be making it, again.

This pie is simple and quick to put together. If you like a less sweet pie, decreasing the sugar is an easy adjustment, especially if you use sweetened coconut. I was out of vanilla, but coincidentally had coconut extract. How’s that for luck! Otherwise, I followed the directions to a T. The pie cut well and wasn’t greasy. I didn’t pre-bake the crust (too lazy) and it wasn’t soggy. My family loved it.

Very tasty coconut pie. I would reduce the sugar, it is plenty sweet. I served it with a dollop of fresh whipped cream on top! Yummy and easy!

Recipe looks great but I’m writing to ask you about the interesting plate. I have a plate which looks very similar that was passed down in the family. I believe mine is of German origin. Would love to know. Best wishes!

I made ths today.
It went together very quickly and easily. I did prebake my pie crust to prevent the soggy bottom that is so common in custard pies.
This was a delicious pie, but very, very rich. I will make it again but will probably decrease the butter and the sugar. It has a great texture and my DH loved it!

I am not a coconut fan, but my family is, so I only use it occasionally. I was wondering if you used sweetened or unsweetened flaked coconut. I’m guessing unsweetened because otherwise it would be too sweet with the added sugar, but I want to be sure!:) Thank you!

IN RESPONSE TO mousemom03 review – since I am unable to edit (and elaborate) my own review I am posting this comment:
Yes, this is very very sweet. But I love sweet, so that wasn’t a negative for me. Also, I did not find this to be greasy AT ALL. Nor was it difficult to slice. Perhaps she didn’t let it set long enough – as with most pies, you need to let them cool and set or they will turn to mush upon cutting.
Is it the best pie I’ve ever had? Well no. But I was judging it on its own merits, not compared to a million other pies. I think this pie is a perfect example of something that can be simple with few ingredients and come out tasty.

I’d like to thank you for the basis of a odd new recipe I will be making many times again! I LOVE coconut and was frantic to make this pie as soon as I saw it. I was short on prep time and didn’t have white vinegar or a pie crust[!], and I only had shaved dried unsweetened coconut. So I went ahead and sprayed a pie dish with Pam, used apple cider vinegar in stead of white vinegar, and used almost double the the dried shaved unsweetened coconut, I mixed all the ingredients together and dumped it in the dish and put it in the oven.
I thought; “Oh well!’ and crossed my fingers…
It turned out delicious! Gooey and sticky and full of the coconut flavor I was craving! I am hooked on this! The chewy edges without a pie crust are to die for. Is it still a pie if it doesn’t have a pie crust? lol
My ‘pie’ obviously didn’t slice up as pretty as yours, having no crust…but with a little less sugar, fat and calories to contend with, I’ll make it ‘my goofy’ way, again and again!! Thank You!

I’m not a pastry fan so tried this just in a glass baking dish but made the executive decision to use only 1/2 cup of sugar with unsweetened coconut. It was plenty sweet enough for me that way, I could even have less sugar! The pie crust would have soaked up a bit of goo, but it was delish, almost like a crispy custard.
