Description

Craving some coconut but don’t have the time (or know-how) for a coconut cream pie? Try this simple and delicious French Coconut Pie! If you love chess pie, you’ll love this pie!

Ingredients

  • ½ cups Unsalted Butter
  • 1 Tablespoon Corn Meal
  • 1-½ cup Sugar
  • 2 Tablespoons Flour
  • 3 whole Eggs
  • 2 teaspoons Vinegar
  • 1 Tablespoon Vanilla
  • 1 cup Shredded Coconut
  • 1 whole Unbaked Pie Shell

Preparation

1. Preheat oven at 450 degrees.
2. Melt butter in medium sauce pan.
3. Remove from heat and add corn meal, sugar, and flour.
4. Once batter is cooled, add one egg at a time, stirring continuously to prevent the eggs from cooking.
5. Stir in vinegar and vanilla.
6. Fold in coconut.
7. Pour into unbaked pie shell and bake for 10 minutes.
8. Turn oven temperature down to 350 degrees and bake for 25 minutes.
9. Let cool for 10-15 minutes before serving.
