Description

This Double Chocolate Coconut Energy Bar recipe is quick and easy to make. And better yet, it’s super delicious!

Ingredients

  • 1 cup Old Fashioned Oats
  • ⅔ cups Chocolate Whey Protein Powder
  • ¼ cups Almond Milk (or Milk Of Your Choice)
  • 1 teaspoon Vanilla Extract
  • ¼ cups Unsweetened Crunchy Or Smooth Peanut Butter
  • 2 Tablespoons Unsweetened Shredded Coconut
  • 1 Tablespoon Unsweetened Cocoa Powder
  • 2 Tablespoons Dark Chocolate Chips

Preparation

Mix everything but the chocolate chips together in a medium sized bowl. Make sure to stir together really well! If the mixture feels a bit too dry (different protein powders soak up more liquid than others), just add a tiny bit more almond milk.

Once you’ve got the main ingredients mixed together, add the chocolate chips so they’re spread evenly throughout the dough.

Line a 4×8 inch pan with parchment paper, spray with a little coconut oil, then spread the dough so that it’s pressed down evenly into the pan. Use your hands or a spatula to make sure the top is flat.

Then, place the mixture in the fridge for 1-2 hours or until chilled.

Once the bars are chilled, cut them into five pieces, wrap each individually in foil or plastic wrap, and eat up! Store any remaining bars in the fridge or freezer.
