Description

Oh Lord these little pies are ridiculously good! Autumn apples swimming in a glorious filling, and bundled into cozy blankets of golden, deep-fried crusts. I would suggest a Gala, Honey Crisp, 0r Golden Delicious. Of course, a combination of these would be wonderful!

If you’re running short on time, you could always use canned pie filling and refrigerated pie crust for a quick dessert, but homemade is best. Love, Mama Bear.

Ingredients

  • 1 cup Apples, Chopped Or Sliced
  • ¼ cups Orange Juice, Divided
  • 1 Tablespoon Sugar
  • 1 teaspoon Grated Orange Peel
  • ⅛ teaspoons Salt
  • 2 teaspoons Tapioca
  • 1 whole 9 Inch Pie Crust
  • Oil, For Frying
  • Sugar Or Cinnamon Sugar, For Dusting

Preparation

1. Combine apples, 3 tablespoons orange juice, sugar, orange peel and salt; cover and cook gently 10 minutes or until apples are tender.
2. Boil tapioca in remaining tablespoon of orange juice just to soften; stir into the hot mixture. Cook and stir until thickened and smooth. Cool.
3. Thinly roll out pastry; cut into 5-inch rounds. Place 1-1/2 tablespoons filling on each round; moisten edges with water, fold in half and seal edges well with a fork. Prick a few small holes on the tops of the pies.
4. Deep fry in oil heated to 375 degrees F about 3 minutes or until golden brown. Drain on paper towels. Dust with sugar right away. A cinnamon and sugar mixture could also be used for dusting in place of just sugar.
5. Eat two by yourself, before anyone else even knows you made them. They go really fast, and you deserve your just desserts!
