In a small pot combine the water and quinoa. Bring to a boil and cook until all of the water has totally disappeared, about 15 minutes.
Add the milk, spices, vanilla, sugar, and corn starch to the quinoa. Bring to a boil and then reduce heat. Simmer for 5 to 7 minutes, until the excess milk has evaporated, leaving the quinoa suspended in a creamy pudding. Remove from heat.
Chop the prunes into small pieces and stir them into the pudding. Serve warm, sprinkled with cinnamon.
