For two years I’ve tried a variety of cheesecake recipes, looking for the perfect one. This is it. Dense, yet creamy. You can change this up by using your favorite cookie as the crust.
For the crust:
Mix the cookie crumbs, melted butter and sugar. Press into the bottom and one inch up the side of a nine inch springform pan.
Cheese cake portion:
Mix all ingredients in your mixing bowl, on medium speed, adding one egg at a time. Beat well until all smooth. Pour into crust.
Bake in a preheated oven at 500 degrees for 10 minutes. (Place a cookie sheet on the lower rack in the oven, in case there are some drips from the springform pan).
After the 10 minutes turn the oven down to 200 degrees and bake for 50 – 60 minutes. Bake until center is almost set….yet it still wiggles. You do not want to over cook, as you want a creamy cake.
Do not open the door and peek while baking, at least not until the very end to see if it is done.
Remove from oven and place on cooling rack. Take a knife and run it around the pan to loosen the crust.
Cool, refrigerate, remove from pan after it has cooled some.
You can top this with fruit, etc. But this is great plain!
This keeps well for a week, covered in the refrigerator.
