Melt chocolate in a double boiler over hot (not boiling) water. Remove the top pan and stir in sweetened condensed milk. Stir well and add vanilla. Add enough evaporated milk for a thinner consistency—sauce will thicken significantly when cool.
Refrigerate for up to 3 months. To use, warm the amount you want in the microwave, stirring every 10 to 15 seconds, until it is a good consistency for drizzling.
