Description

Chocolate mousse and chocolate ice cream in one! Ice cream that tastes like mousse and doesn’t require cooking – just add cocoa powder. Smooth and chocolaty.

Ingredients

  • ⅔ cups Sugar
  • ½ cups Unsweetened Cocoa Powder
  • 3 whole Egg Yolks, Beaten Well
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 2 cups Heavy Cream
  • ⅔ cups Milk
  • ⅓ cups Semisweet Chocolate Chips

Preparation

Recipe yields 1.5 quarts of ice cream.

1. In a large bowl, mix sugar and cocoa together. Add beaten egg yolks, vanilla and salt and blend with a whisk or electric mixer.
2. Add cream and milk. Blend well. Chill in the fridge until cold.
3. In blender or food processor, process the chocolate chips until they are a fine crumb.
4. Add the chilled chocolate ice cream mixture to your ice cream maker per its directions. (In my Cuisinart, 25 minutes is how long it takes.) Add the chocolate chips during the last five minutes of churning. Eat now or freeze for later!

This ice cream is amazing. Very rich and creamy. I cooked my egg, sugar, milk, cocoa, and salt mixture on the stove and then cooled it in the refrigerator because I was wary of making ice cream with raw eggs. It turned out great!

I’m just discovering the joys of homemade ice cream–and this really hit the spot. Super easy to make, and tastes just like chocolate mousse–but frozen. I drizzled in melted chocolate just before turning off the machine, for a straciatella! Yum!
