Description

These brownies taste nothing close to gluten free. Even my brother who is the pickiest eater I know has been caught eating the whole pan at midnight! These will be a hit with everyone, not just your gluten-free friends.

Ingredients

  • 1 cup Semi-sweet Chocolate Chips, Divided
  • 6 Tablespoons Butter
  • 1-½ cup Almond Meal
  • ⅓ cups Cornstarch
  • ½ cups Cocoa Powder
  • 1 teaspoon Vanilla
  • ½ cups Sugar
  • 3  Eggs

Preparation

1. Grease a 9×9 brownie pan and set the oven to 350ºF. You can use cooking spray, butter, oil, whatever you have on hand. Then take a microwave safe bowl and combine 1/2 cup of the chocolate chips and butter. Put it in the microwave for about 1 minute, take it out and let it sit for a few minutes.

2. While you’re waiting for the butter and chocolate to melt together, combine almond flour, cornstarch, and cocoa powder in a large mixing bowl. After this, mix chocolate and butter mixture well with a whisk. Add vanilla, then sugar, then eggs. Make sure it’s combined very well before you add it to your dry ingredients.

3. Once you have all the ingredients mixed, together fold in the remaining 1/2 cup of chocolate chips. Pour the mixture into the greased pan and put it in the oven for 40-50 minutes or until a testing stick comes out clean.

This may not be fat-free but at least you can say they’re gluten-free! Enjoy!
