Description

A healthy oat bar that is full of fresh cherries and is topped with a coconut almond crumble. Tastes like you’re biting into a cherry pie.

Ingredients

  • FOR THE BASE:
  • ¾ cups Oat Flour
  • ¾ cups Oatmeal
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Kosher Salt
  • ⅓ cups Unsweetened Applesauce
  • 1 Tablespoon Maple Syrup
  • ¼ cups Water
  • 1 teaspoon Vanilla Extract
  • FOR THE FILLING:
  • 1-½ cup Homemade Cherry Quick Jam Or Cherry Preserves
  • 1 teaspoon Maple Syrup To Sweetened Jam (optional)
  • FOR THE TOPPING:
  • ¼ cups Almond Meal
  • ¼ cups Shredded Coconut (unsweetened)
  • ¼ cups Oat Flour
  • ¼ cups Oatmeal
  • ¼ teaspoons Cinnamon
  • ¼ teaspoons Salt
  • 2 Tablespoons Coconut Oil
  • 2 Tablespoons Coconut Sugar Or Brown Sugar

Preparation

Preheat oven to 375ºF. Spray an 8 x8 pan with cooking spray. Set aside.

For the base: In a bowl add oat flour, oats, baking powder, cinnamon and salt into large bowl. Stir. Now add in the applesauce, maple syrup, water, vanilla and mix well. Pour batter into the prepared pan and push down firmly with fingers to smooth out.

For the filling: In a small bowl add the cherry jam and maple syrup, and spread over top of oat mixture.

For the topping: In a separate bowl add almond meal, shredded, coconut, oat flour, oats, cinnamon and salt. Mix well. Add coconut oil and coconut sugar. Crumble mixture with your fingers. Sprinkle over top of cherry mixture.

Bake for 30-35 minutes at 375ºF or until the top is slightly golden and firm. Allow to cool for at least 20 minutes before cutting into squares.

A friend of mine has a sweet cherry tree in his yard and gave me a couple gallon Ziplocs for the freezer last year. I still haven’t used them all up, but always keep my eye out for cherry recipes. I thought I’d give this one a whirl, since I had all the ingredients on hand, except the shredded coconut, which I omitted. There isn’t much sweetener, so I wasn’t sure how they’d come out, but I like the slight tartness from the cherries. I ended up grinding more almonds than I needed to, so I mixed the extra meal in with the quick cherry jam. I only had a cup of jam after cooking down the cherries, but it was enough to cover the crust. I put (greased) parchment paper in my baking pan and I had a little difficulty spreading the crust batter in the bottom. It was very sticky and I had to spread thinly to cover the bottom. Even then, the corners were rounded off. However, the whole thing baked up fine and it is tasty. Plus, 1/16 of the recipe is just under 100 calories. Thanks for sharing!

I made these today and they turned out great! I was looking for a healthy fruit bar and I found it! I used marionberry jam, as I didn’t have cherry and they are wonderful! My whole family loved them! Thank you for the recipe!!
