Description

Quick and easy treat that you don’t need a special reason to bake.

Ingredients

  • 3-½ cups Fresh Pitted Cherries
  • 3 Tablespoons Butter, Melted
  • 1-¾ cup Sugar, Divided
  • ½ cups All-purpose Flour
  • ½ cups Whole Wheat Pastry Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • ½ cups Milk
  • 1 Tablespoon Flour Or Cornstarch
  • 1 cup Boiling Water

Preparation

Preheat oven to 350 degrees. Spread cherries in a greased 9-inch pie pan or 9×9 square baking dish.

Combine butter, 3/4 cup sugar, flours, salt, baking powder and milk in a bowl. Spread the mixture over the cherries.

Combine the remaining 1 cup of sugar with a tablespoon of flour/cornstarch and a cup of boiling water then pour it over the batter and cherries.

Bake for 45 minutes.

Note: Use non-dairy milk and Earthbalance to make it vegan.

Great cobbler, I really liked the addition of the whole wheat flour in the batter. I did cut the sugar down to 1 cup – 1/2 c. in the batter and 1/2 c in the sauce and I thought it was still pretty sweet, probably depends on the cherries. Also I used an 8.5×11 pan and it still overflowed all over my oven.
