Description

Soft oatmeal granola bars with chunks of caramel and apple chips.

Ingredients

  • ¾ cups Butter
  • ¾ cups Brown Sugar
  • 2 teaspoons Caramel Extract
  • 2 whole Eggs
  • 1-½ cup Flour
  • 2 teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Salt
  • 2-½ cups Quick Oats
  • 1 cup Soft Caramel Candies, Quartered (I Used Rolos)
  • ¾ cups Miniature Marshmallow Bits
  • 1 cup Apple Chips, Lightly Crushed
  • ¼ cups Chocolate Chips
  • ½ teaspoons Shortening

Preparation

Preheat oven to 350 F.

In a large bowl using a mixer, cream the butter and sugar until light and creamy. Add the caramel extract and eggs and cream again. Set aside.

In a medium bowl stir together the flour, cinnamon, nutmeg and salt. Slowly add it to the butter mixture. Add the oats a little bit at a time. The dough will be very stiff. Stir in the Rolos, marshmallows and apple chips by hand.

Spread the dough into a greased 9×13 baking pan. Bake at 350 F for 20-22 minutes. Remove from the oven and allow the bars to cool completely. Cut into 16 bars.

In a microwave safe bowl, combine the chocolate chips and shortening. Heat for 30 seconds and stir. Repeat the 30 second heat bursts, stirring in between, until melted and creamy. Place melted chocolate in a plastic bag and cut one corner off. Drizzle chocolate over the bars. Let it set up. Store in a sealed container.
