Description

Fudgy and delicious! You can substitute the sun crystals with sugar—just use 2/3 cup instead of 1/3 and add a bit more applesauce/oil.

Ingredients

  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 3 whole Eggs
  • 1 Tablespoon Oil
  • 2 Tablespoons Unsweetened Applesauce
  • ⅓ cups Cocoa Powder
  • 1 pinch Sea Salt
  • 2 teaspoons Vanilla Extract
  • ⅓ cups Sun Crystals (Cane Sugar/Stevia Blend)
  • 1-½ cup Walnuts, Chopped
  • ½ cups Semi-sweet Mini Chocolate Chips

Preparation

1. Preheat oven to 350 degrees F and grease an 8″x8″ square baking pan with nonstick spray or butter.
2. Combine all the ingredients (except walnuts and chocolate chips) to a blender and blend until smooth.
3. Stir in the walnuts, and then pour the batter into your prepared baking dish.
4. Sprinkle with chocolate chips.
5. Bake in the preheated oven for about 30 minutes.

Very good. Very different texture than a flour based brownie. Okay when made with pinto beans. Black beans are the best for this recipe. Delightful sweet treat!

The ultimate diet dessert! My boyfriend and I made little brownie sundaes by topping these with some vanilla frozen yogurt and a bit of chocolate sauce. It’s not too often you come accross a “guilt-free” dessert recipe that actually is guilt-free!

I used Splenda instead of the sun crystals that the recipe called for, and omitted the chocolate chips (though I might add them in next time).
