Description

Bittersweet fudge in an oatmeal cookie bar.

Ingredients

  • FOR THE BARS:
  • 14 Tablespoons Butter, Softened
  • 2 cups Brown Sugar
  • 1 teaspoon Baking Soda
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • 2-½ cups Flour
  • 1-½ cup Quick Cooking Oats
  • 1-½ cup Old Fashioned Oats
  • FOR THE BITTERSWEET FUDGE FILLING:
  • 1-½ cup Bittersweet Chocolate Pieces, 60% Cacao
  • 2 Tablespoons Butter
  • 1 can (14 Oz. Size) Sweetened Condensed Milk
  • 2 teaspoons Vanilla

Preparation

Preheat oven to 350ºF.

For the bars:
Beat butter and brown sugar until well blended. Add soda, eggs and vanilla. Blend well. Add remaining flour and oats, mix until combined.

For the filling:
In a saucepan over low heat, warm chocolate pieces with butter and sweetened condensed milk until melted and smooth. Stir in vanilla.

To assemble the bars:
Press 2/3 of the bar mixture into an ungreased 15x10x1 inch pan. Bar mixture will be sticky; wet fingers as necessary. Spread chocolate layer on top. Dot remaining pieces of dough on top of chocolate.

Bake at 350ºF for about 25 minutes, or until tops are lightly browned. Cool and cut. Store in airtight container at room temperature.

It had just the right amount of sweetness, but the oatmeal part on top seemed a little underdone (but I used all rolled oats instead of a mix with quick cooking ones so I don’t know if that was the reason for it)

Easy to whip up, tasty, I used a cookie sheet with sides but the dough only covered about 2/3rds of it which worked fine. I added a bit of salt as well because I like salt with sweet.

These are absolutely delish!! I’ve been making them for years and they ar always a hit. Not too chocolatey and I like to pretend they are healthy becuase of the oatmeal. And the look nice on a tray becuae you can cut them to any size you like. MMMMMMM
