Description

Cool down with these refreshing (adult) berry mojito popsicles!

Ingredients

  • ½ cups Sugar
  • 1 cup Water
  • 2 whole Limes, Zest Only
  • ½ cups Mint Leaves (or As Desired)
  • 2 cups Lime Juice, For 2 Cups You'll Need About 20 Limes
  • ⅓ cups Blackberries
  • ⅓ cups Blueberries
  • ⅓ cups Blackberries
  • ½ cups Gold Rum

Preparation

Note: Cook time above represents approximate freezing time for popsicles to set. This may vary.

Combine sugar and water in a small pot over medium-high heat. Gently stir the sugar to dissolve and bring the mix to a boil. Turn off heat. Add lime zest and 1/4 cup (or a handful) of mint leaves to the sugar/water mix and let it steep and cool to room temperature. Once cool, pull out the mint leaves (they can get a little icky).

In a different bowl combine lime juice, berries and another 1/4 cup (or a handful) of mint and muddle it to break down the berries a bit. Add sugar mixture into the berries and stir to combine. Add rum to the mix and combine.

Pour mixture into popsicle molds (or other containers) and freeze until set.

Recipe makes roughly 6 popsicles.

I really enjoyed these popsicles! They lean more to the sour than the sweet side of things and have a good kick of mint and rum, though if you prefer your popsicles to be on the sweet side I might try adding a bit more sugar to the simple syrup.
