Description

Sopapilla is typically a deep fried dish, but this oven alternative cuts most of the fat and yields an equally delicious, crispy, satisfying dessert!

Ingredients

  • 4 whole Whole Wheat Tortillas
  • 1 Tablespoon Butter
  • 4 Tablespoons Cinnamon Sugar
  • 4 Tablespoons Honey

Preparation

Spread both sides of the tortillas with a thin layer of butter, just enough to thinly coat each side.

Lay the tortillas flat on baking sheets and sprinkle them with the cinnamon sugar, trying to make an even covering. Shake the tortillas over a bowl so that only the cinnamon sugar that’s stuck to the butter is on the tortillas. Save the cinnamon sugar that comes off the tortillas.

Put the tortillas under the broiler for a few minutes until the sugar looks like it is beginning to caramelize and the tortillas start to look bubbly. Take them out of the oven, flip the tortillas over, and sprinkle with the remaining cinnamon sugar. Put back in the oven until the tortillas are crispy and the sugar on that side is beginning to caramelize.

Put each tortilla on a plate and drizzle with honey. Serve warm, and whole or cut into slices. If you’re looking for something extra decadent, serve drizzled with chocolate syrup alongside a scoop of vanilla or caramel ice cream!

I make these with splenda instead of sugar and use agave nectar instead of honey. A very low sugar/carb option that equals the original in taste and texture!
