Description

Big flavor often comes in small packages, and apple pie bars are no exception. They pack the flavor punch of a freshly baked apple pie but are much easier to consume sans fork and knife. With just the right amount of filling sandwiched between two crusts, these bars make for the perfect seasonal snack. Be warned that you will be tempted to eat the cinnamon-laden apple filling before the bars even make it to the pan!

Ingredients

  • FOR THE CRUST:
  • 2-½ cups All-purpose Flour
  • 1 teaspoon Salt
  • 1 cup Chilled Butter
  • 1  Egg Yolk
  • ⅔ cups Milk
  • FOR THE APPLE FILLING:
  • 8 cups Honeycrisp Apples, Peeled, Cored, And Thinly Sliced
  • 1 cup Sugar, Plus 2 Teaspoons For Brushing On The Dough
  • 2 teaspoons Cinnamon, Divided
  • ½ teaspoons Nutmeg
  • 1 cup Cornflakes Cereal, Crushed
  • 1  Egg White
  • FOR THE GLAZE:
  • 1 cup Powdered Sugar
  • 1-½ Tablespoon Milk
  • ½ teaspoons Vanilla Extract

Preparation

Preheat oven to 350ºF.

For the crust:
In a medium bowl, stir together flour and salt. Cut in butter until mixture is mealy. With a fork, stir in the egg yolk and milk. Divide dough into 2 equal parts and chill in the fridge until ready to use.

For the apple filling:
Over the apples, sprinkle 1 cup sugar, 1 1/2 teaspoons cinnamon, and nutmeg. Mix well.

On a lightly floured surface, roll one half of the dough into a large rectangle and place into the bottom of a greased 9×13 pan. Sprinkle cornflakes cereal over the crust, then layer the apple mixture over the cereal. Roll the other half of the dough into a rectangle and place over the apples.

Brush the top crust with the egg white, remaining sugar, and remaining cinnamon. Bake for 50 minutes to 1 hour; the top crust should be lightly browned.

For the glaze:
Mix powdered sugar, milk, and vanilla extract until smooth, then drizzle over the bars while they are still warm.
