My usual criteria for a cake is chocolate, super moist, chocolate, wonderful creamy frosting and did I say chocolate? The other day I had a whole bin of apples that were not getting eaten and I knew they were at the point that they really needed to be used or tossed. I don’t like to toss. So enter this cake. Apple cake. I put the word amazing in the title because this cake is truly that.
Preheat oven to 350 degrees F. Grease and flour a 9 x 13 inch pan.
In a large bowl, sift together flour, cinnamon, sugar, salt and baking soda. Add oil, applesauce, eggs and vanilla. Mix well by hand. This batter will be very thick. Fold in the chopped apples and nuts (if you want nuts). Spread evenly in the pan.
Bake for 40 minutes. Then remove it from the oven and poke holes throughout the cake with a toothpick. Glaze while still hot. Let the glaze seep into the cake and cool slightly before slicing.
For the glaze:
In a saucepan combine the brown sugar, milk and butter over medium heat. Bring to a boil and stir constantly for two minutes. Pour over cake while still hot. Let the glaze seep into the cake.
Serving size is 12 nicely sized pieces!

This is very nearly my Grandma’s Apply Cake, with slight differences in the amount of oil & sugar. The biggest difference is that instead of applesauce, she added 3/4 cup raisins. As children, we would wait with anticipation for my mom to make this in the fall. Mmmmmm….especially with a little whipped cream on top! Thanks for posting Carolina!
