This is not your usual cornbread! This could be dessert! The Baldpate Inn is located in Estes Park, Colorado. All of their food is homemade. One time on a family vacation, I bought a small book called Baldpate Collections, which includes some of the Inn’s famous favorite recipes.

One little jar of baby food makes this cornbread PERFECT! There is nothing gross about baby food, after all, we feed it to our little ones! Sweet but not too sweet, not caky at all (yuck!), and moist. Mmm.
