Preheat waffle iron according to manufacturer’s instructions.
In a mixing bowl or in the bowl of your stand mixer combine softened butter and sugar. Use a mixer to cream it and let it continue to mix until light and fluffy. Add eggs one at a time, mixing after each addition and scraping sides of bowl. Add sour cream and vanilla into the butter mixture and mix until well combined. Set aside.
In a separate bowl, combine flour, salt and baking soda and then pour it into the wet ingredients. Mix until just combined and no dry spots remain.
Put a scoop of batter into the waffle maker and bake per the manufacturer’s instructions.
Serve with sliced strawberries and whipped cream.
