Description

I got this recipe from a neighbor years ago, and have adapted it slightly to suit my family. (The original called for 3 eggs and a whole cup of oil, which really seemed extreme!)

Ingredients

  • 2 cups Sugar
  • ½ cups Oil
  • ½ cups Applesauce
  • 2 whole Eggs
  • 3 cups Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 2 cups Raw, Grated Zucchini
  • 1 cup Chopped Walnuts
  • 3 teaspoons Vanilla

Preparation

Combine sugar, oil, applesauce and eggs in a mixing bowl. Add flour, baking soda, baking powder and salt and combine well. Add cinnamon, zucchini, nuts and vanilla and mix well. Spoon into 2 loaf pans (mine are about 9×5). Bake at 350F for one hour, checking for doneness with a knife in the center. I also sprinkle the top with a mixture of cinnamon and sugar before baking.
