Really good and easy! It only took one medium zucchini to make one cup shredded. I put the shredded zucchini on a napkin to help absorb the moisture before adding it to the mixture. The apple adds a nice flavor. I highly recommend this recipe.

Just made this bread after my sister-in-law (Shana) recommended it, and it is amazingly good! I cut myself a slice to try it and ended up having three! Time to put it away before I eat the whole thing!! I love how quick and easy this was to throw together! Even my sweet son James loves it, now I have a way to get him some extra fruit and veggies!

Hello Marie, so glad you gave it a try. It is very addicting, hubby usually can’t even wait for it to cool.
These can also be made into jumbo muffins, only takes 25-30mins for the muffins. Great to bring along for a picnic or road trips.
