Description

Strawberry streusel banana bread!

Ingredients

  • FOR THE STREUSEL:
  • 2 Tablespoons Whole Wheat Flour
  • 2 Tablespoons Sugar
  • 1 teaspoon Cinnamon
  • ¼ cups Chopped Walnuts
  • 1 Tablespoon Butter
  • FOR THE BREAD:
  • ½ cups Rolled Oats Ot Multigrain Hot Cereal Mix
  • ¾ cups Milk
  • 1-½ cup Whole Wheat Flour
  • ½ cups Flax Seed Meal
  • ¼ cups Brown Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 2 whole Overripe Bananas, Mashed
  • 2 whole Eggs, Lightly Beaten
  • 6 Tablespoons Butter, Melted
  • 1-½ cup Strawberries, Chopped

Preparation

For the streusel, combine flour, sugar, cinnamon, and nuts in a small bowl. Cut in butter until mixture resembles coarse crumbs. Set aside.

Preheat oven to 350ºF. Grease a 9×5 inch loaf pan.

For the bread, in another small bowl, combine oats/cereal mixture and milk. Let sit for 5 minutes.

In a medium bowl, combine flour, flax seed meal, brown sugar, baking powder, and salt. Add bananas, eggs, melted butter, and oat/cereal mixture and gently fold until just combined. Gently fold in strawberries.

Scrape batter into prepared pan and sprinkle with streusel. Bake 50-60 minutes or until top is evenly golden brown. Let cool in the pan for 10-15 minutes. Transfer to a wire rack to cool completely.
