Description

Have chocolate for breakfast, without the guilt!

Ingredients

  • ½ cups All-purpose Flour
  • ¾ cups Whole Wheat Flour
  • ⅓ cups Special Dark Cocoa Powder (can Use Regular Cocoa Powder)
  • 1-¼ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ⅛ teaspoons Ground Nutmeg
  • ⅛ teaspoons Ground Cloves
  • 1 cup Mashed Bananas
  • ⅓ cups Skim Milk
  • ½ teaspoons Vinegar
  • 1  Large Egg
  • ½ cups Splenda Brown Sugar
  • ¼ cups Unsweetened Applesauce
  • 1 teaspoon Vanilla Extract

Preparation

Preheat oven to 350ºF. Spray a mini muffin pan with nonstick cooking spray and set aside.

In a large bowl, whisk together flours, cocoa powder, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

In a small bowl, whisk mashed bananas, milk, and vinegar until smooth. Whisk in the egg, Splenda, applesauce, and vanilla until well blended. Add wet ingredients to dry ingredients and stir just until combined.

Fill each muffin cup with about 1 heaping tablespoon of batter. Bake 10-12 minutes or until a toothpick inserted in the center comes out clean.

my four year old daughter says these muffins are the best snack she’s ever had! and I love anything with dark chocolate so these were bound to be a hit at our house. Love the healthy factor, love they have no oil, love that they are moist and delicious. *I used regular brown sugar though cuz I stay away from artificial sweeteners, and all-purpose flour because I’m out of whole wheat
