Description

Small batch recipe for yummy glazed muffins!

Ingredients

  • FOR THE MUFFINS:
  • ½ cups Flour (I Used Whole Wheat White Blend)
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 1 pinch Nutmeg
  • ¼ cups Milk
  • 1 whole Egg, Beaten
  • 1 Tablespoon Butter, Melted
  • 1 Tablespoon Sugar
  • ½ whole Apple, Finely Chopped Or Grated, Peel On
  • FOR THE GLAZE:
  • ½ cups Powdered Sugar
  • 1 teaspoon Vanilla
  • 1 teaspoon Milk

Preparation

Mix dry ingredients together. Combine milk and egg, add to the dry ingredients.

Add melted butter and mix well. Combine the sugar with chopped apples. Stir apples into the batter.

Fill 3-4 greased muffin tins and bake at 350ºF for about 20 minutes or until tops and golden brown and spring back when pressed.

For the glaze, combine powdered sugar with vanilla and milk, adding a teaspoon of milk at a time until glaze reaches desired consistency. Drizzle glaze over the muffins.

I love that this recipe only made 4 muffins, perfect for our little family. Great flavor and not too sweet, we really liked them.

Very Yummy! I doubled the recipe and made 7 cupcake-sized muffins. Perfect amount to leave on the counter for morning snacking.

I tripled the recipe. I made a pan of mini muffins and about seven regular sized muffins. I had 17 minutes on the mini muffins and 20 on the regular sized. It might be just me, but the frosting didn’t turn out the greatest, but maybe if I had better vanilla extract. As the other review said, these were not too sweet, so it was a nice change to bake something that wasn’t so sweet but was still very tasty.

Thank you so much for this recipe! I wanted to make this recipe and bring it in to work for a brunch we were having. Instead of making the 4 muffins, I multipled the recipe and made alot of mini muffins. They were delicious! Everyone loved them. They were really moist and not too sweet.
