Unusual Banana Nut Bread

Description

What makes this so unusual is it contains no eggs, oil or butter. Very moist and yummy.

Ingredients

  • 1-½ cup Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • ½ teaspoons Cinnamon
  • 1 cup Mashed Bananas
  • ½ cups Mayonnaise
  • 1 cup White Sugar
  • 1 cup Walnuts Or Pecans, Chopped

Preparation

Preheat oven to 375 F.

1. Sift flour, baking soda, salt and cinnamon together.

2. Using 3-4 bananas (depending on size), mash the bananas and mix in mayonnise and sugar.

3. Mix in dry ingredients 1/2 cup at a time.

4. Add nuts and stir to incorporate.

5. Pour into a greased bread pan and bake for 35-40 minutes.

6. Check for doneness by sticking a long toothpick into the middle of the bread. If the bread is still doughy, drop the temperature to 350 F and bake for additional 10 minutes.

Makes 1 loaf.

Cool at least 5 minutes before removing from pan.

My husband LOVED this banana bread.

My kids loved this recipe. It has a nice banana flavor and is super moist. It is a little on the sweet side so when I make it again, I’m going to cut the sugar to 3/4 cup. It’s really to quick to prepare.
