Description

This zucchini bread is super moist and delicious! Smother it in butter because that is the only way to eat it! A recipe every kitchen should have!

Ingredients

  • 3 whole Eggs
  • ½ cups Good Olive Oil
  • ½ cups Applesauce (unsweetened)
  • 3 teaspoons Pure Vanilla Extract
  • 3 Tablespoons Cinnamon
  • 1 teaspoon Kosher Salt
  • 2 teaspoons Baking Soda
  • ¼ teaspoons Baking Powder
  • 2 cups Granulated Sugar
  • 2 cups All-purpose Flour, Plus More For Dusting Pan
  • 2 cups Packed Zucchini, Freshly Grated
  • Butter For Greasing Loaf Pan

Preparation

Preheat oven to 350 degrees F. Butter and flour a standard-sized loaf pan.

Combine eggs, oil, applesauce and vanilla into your mixer. Mix until just combined, then add cinnamon, salt, baking soda and powder. Mix again. Then add sugar and flour and mix until incorporated. Next, fold in grated zucchini with a spatula.

Pour batter into prepared loaf pan and bake for 60 to 70 minutes, or until a tester comes out clean. Let cool, and remove from pan. Slice, smother with butter and devour!
