Description

Need help with Ree’s Smarty Pants Quizzes? These little gems are packed with antioxidants, Omega-3’s and Vitamin E to keep our brains moving.

Ingredients

  • 2 cups Whole Wheat Pastry Flour
  • 1 cup Sugar
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1-½ teaspoon Cinnamon
  • ¾ cups Chai Tea Concentrate (such As Tazo)
  • 2 whole Eggs, Beaten
  • ¼ cups Melted Butter
  • 1-½ teaspoon Vanilla Extract
  • ½ cups Chopped Walnuts
  • ½ cups Chopped Pecans
  • 1 cup Dried Blueberries

Preparation

1. Preheat oven to 380F. Coat 12 muffin cups with cooking spray or line with cupcake liners.

2. Combine flour, sugar, baking powder, salt and cinnamon in a mixing bowl.

3. Combine tea concentrate, eggs, butter and vanilla in a separate bowl and whisk well.

4. Make a well in the center of dry ingredients. Pour wet ingredients into the well and stir until just combined. Gently fold in nuts and berries.

5. Fill muffin cups 2/3 full. Bake 15 – 18 minutes, until centers spring back when touched.
