Description

These muffins are super! Most recipes use 1 banana; this one uses 3 and they are super moist.

Ingredients

  • FOR THE MUFFINS:
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 3 whole Bananas, Mashed
  • ¾ cups Sugar Or Splenda
  • 1 whole Egg, Beaten
  • ⅓ cups Vegetable Oil Or Applesauce
  • 1 teaspoon Vanilla
  • FOR THE STREUSEL TOPPING:
  • ⅓ cups Brown Sugar
  • 2 Tablespoons Flour
  • ⅛ teaspoons Cinnamon
  • 1 Tablespoon Butter, Cubed

Preparation

1. Preheat oven 375ºF. Line a muffin pan with liners or grease and flour.
2. Mix together the dry ingredients: flour, baking powder, baking soda, salt and cinnamon.
3. Mix together in a separate bowl the wet ingredients: mashed banana, sugar, egg, oil (or applesauce) and vanilla.
4. Add wet ingredients to dry ingredients and stir just until barely combined.
5. Scoop into the muffin tin using a 3-tablespoon scoop or simply fill until 3/4 full.
6. For the streusel topping, in a small bowl, mix together the brown sugar, flour and cinnamon. Mix in the butter with your fingers until the mixture resembles fine crumbs. Scoop about 1 tablespoon of streusel topping onto each muffin.
7. Bake 17-20 minutes.

This is honestly the best banana muffin recipe I have ever tried. So moist and flavorful; I even decreased the sugar by 1/4 of a cup–yummy!!! This is a permanent addition to my recipe book!

This recipe is perfection! I had a pretty good banana muffin recipe I have used before but tried this one just because of the crubble topping. But even the muffin part was better than my original recipe! Thanks so much, I will definitely be making these again and again. …and again and again…
