Description

Strawberry Muffins are sweet, moist and delicious. I’ve said it before and I’ll say it again: I LOVE MUFFINS! They are so quick to make and perfect for breakfast or for snacking.

Ingredients

  • ⅓ cups Butter, Melted
  • 1 cup Vanilla Yogurt
  • 1 cup Strawberry Preserves
  • 1 Tablespoon Orange Juice
  • 1 teaspoon Vanilla Extract
  • 1 whole Egg
  • 1-¾ cup All-purpose Flour
  • ¾ cups Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt

Preparation

Combine the first 6 ingredients in a small bowl (butter, yogurt, strawberry preserves, orange juice, vanilla, egg). In a large bowl, combine the dry ingredients. Stir the wet ingredients into the flour mixture and mix until well combined. Coat a muffin pan with non-stick cooking spray and fill muffin cups 2/3 full. Bake at 400 degrees for 15 to 18 minutes or until muffins are lightly browned and a wooden pick inserted comes out clean. Remove muffins to a wire rack to cool. Yield: 18 muffins.
