Description

An easy bread that highlights the wonderful flavors of strawberries and lemon. Delicious for breakfast!

Ingredients

  • FOR THE BREAD:
  • 2 cups Fresh Strawberries, Roughly Chopped
  • 1-½ cup All-purpose Flour
  • ¾ cups Granulated Sugar, Plus Extra To Sprinkle On Strawberries
  • ¼ cups Light Brown Sugar
  • 2 teaspoons Cinnamon
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ cups Canola Oil
  • 2 whole Eggs, Lightly Beaten
  • 1 teaspoon Vanilla Extract
  • FOR THE ICING:
  • ½ cups Confectioners Sugar
  • 3 Tablespoons Fresh Lemon Juice

Preparation

Place strawberries in a strainer or colander, and sprinkle with a few tablespoons of granulated sugar. Let sit for 15 minutes.

Preheat oven to 375ºF. Grease and flour a 9×5 inch bread pan.

In a large mixing bowl, combine flour, sugar, brown sugar, cinnamon, baking soda, and salt. In a separate bowl, whisk together oil, eggs, and vanilla extract. Stir in strawberries. Pour wet mixture into flour mixture, and stir to combine. Do not overmix.

Pour batter into prepared loaf pan. Bake for 45 minutes, or until a toothpick inserted into middle of loaf comes out clean. Remove from oven and let cool before removing from pan.

To make the icing, whisk together lemon juice and confectioner’s sugar until all lumps disappear. Add more or less lemon juice depending on how thick/thin you like your icing. Spread icing on cooled loaf, or create a pretty design on top. Enjoy!
