Description

The combination of juicy strawberries, ripe bananas, creamy yogurt, and dense flour makes for a wonderful and sweet bread. No fuss about letting the dough rise; it’s not necessary!

Ingredients

  • 1 cup Whole Wheat Flour, Plus 1 Tablespoon For Strawberries
  • 1 cup Rolled Oats
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • ¼ cups Butter
  • ¼ cups Sugar
  • 2 whole Very Ripe Bananas
  • 1 whole Egg White
  • ¼ cups Plain Greek Yogurt
  • 2 teaspoons Vanilla Extract
  • 1 cup Strawberries, Diced

Preparation

(Makes 1 loaf, 10 servings). Preheat the oven to 350ºF. Coat a loaf pan with non-stick spray. In a large bowl, combine 1 cup flour, oats, baking powder, cinnamon and salt together. In another bowl, cream together the butter and sugar. Mix in the mashed bananas, egg white, yogurt and vanilla. Add the wet ingredients into the dry and stir until combined. Chop strawberries and toss with the remaining tablespoon flour and fold into the dough. Pour batter into the loaf pan and bake for 1 hour, testing near the end with a toothpick, until it comes out clean.

What a great way to use up good tasting ingredients! Overall I liked this bread. However, my mixture was dry and the end product was a little dry as well.
